Originally a monastery, then a caravanserai and a linseed oil factory, the manager Yasemin and her team have spent many years perfecting this idyllic historic retreat. During the painstaking restoration period, a 5km subterranean warren of passages was discovered beneath the building, which now links the four mansions of the hotel and are used as a private wine cellar.

The spacious rooms and suites are stylishly furnished, with chic and contemporary interiors, yet they are still in keeping with the local, more traditional style - featuring beautifully carved stonework, antique rugs and lovely pieces of old pottery. Accommodation is luxurious and three of the suites even benefit from having their own private pool within a cave, where a refreshing morning dip is a delightful way to start your day.

The rest of the hotel is also just as alluring; dining in the restaurant of this former monk's home with its high arched ceilings and atmospheric lighting is an extraordinary experience and offers the opportunity for guests to sample some of the chef's excellent cuisine. The beautiful courtyard, well-maintained gardens and terraces are wonderful places to sit in and gaze at the magical terrain, and early risers may even be lucky enough to catch a glimpse of elegant hot air balloons gently floating in the distance.
